Introducing Asseblies: CTRL+D to group the Active Object and its children into a non-destructive assembly. Alt + Click to merge into a mesh. You can add new objects to the assembly by simply parenting them to the original object. You can then update the assembly by pressing the "Assembly" button again.
You can now realize specific instances. If you hit the "Realize Instances" button from Edit mode or Hair Sculpt mode, it will only realize the selected hair strands. So you can choose which instance will be converted to an object and keep the rest as a Paint System
